Cowboy Caviar

 

  • 1 Red Bell Pepper

  • 1 Green Bell Pepper

  • 1- 2 Jalepeno’s (depending on size and level of spice)

  • 1 Whole Purple Onion

  • 2 cups of Black Beans (rinsed)

  • 2 cups of Pinto Beans (rinsed)

  • 2 cups of cooked Corn (Frozen or Canned if preferred)

  • 1/4 cup chopped cilantro (more if you desire)

    The Dressing

  • 1/2 cup of Olive oil

  • 1/4 cup of White Wine Vinegar

  • 3 whole limes juiced, squeezed

  • 3 tablespoons of Honey or agave, or spicy honey 🍯 (optional)

    This is one of my most favorite items to have in the fridge, I make it every summer, and its delicious, easy and quick fix!

    This recipe works best if you start with a large bowl, I rinse off the beans in some water and add to my bowl. Then I chop all my peppers and onions, lastly the cilantro. Mix up the dressing and its done!
