ChickPea Bark

  • 1-2 Cans of Chickpeas, rinsed and drained

  • 3/4 cup of Dark Chocolate Chips, (or any chocolate you prefer)

  • 1 teaspoon Coconut oil

Preheat oven to 375 to roast the chickpeas. After rinsing and draining chickpeas, spread out on roasting sheet and dry them off using a paper towel. I like to lightly spray my chickpeas with a little plant based oil, and then put them in the oven for 45-50 minutes shaking the pan midway through.

While the chickpeas bake, leaving about 15 minutes to remove them from oven, slowly melt the chocolate in a saucepan, on low heat adding the coconut oil, and watch over carefully to not let the chocolate burn. Remove chocolate from the burner, and set aside.

Once the chocolate is melted, and chickpeas have been removed from the oven, stir in the chickpeas into the chocolate and form into clusters. I like to use a sheet pan and cover with wax paper or parchment paper and freeze for 10 minutes in freezer. These treats can be stored in the refrigerator for up to 5 days. Enjoy.
